Best setup upwind

Hey, I'm quite new to sailing. I do phrf races on a j80 in canada and we're having hard time getting good speed with the 80% jib while going upwind. I believe it is because the boats heels too much in winds of 15kts +. My question is what is the optimal heel for the boat or if the boat should be kept completely flat by depowering the main.

And I see there is so many pros in this forum. Can some of you give me tips for doing better in upwind. (rigging tips and stuff).

I too race my J80 phrf. In light wind pull traveler all the way to windward and ease the mainsheet until the top telltale flies. As wind gets stronger, ease traveler and tighten sheet. Always keep top telltale flying or else you are stalling the main.
As JMB suggests, the sail itself is important. A few months ago I got crushed using a three year old main which caused too much healing and leeway. Just got my new UK main and even I who knows nothing about sails can tell the difference. If you have a knotmeter or GPS you can see how different angles of heel and pointing vs footing affect speed and vmg.

One last piece if advice, speed first point second. Get the boat up to speed before even thinking about pointing. You need the keel to be working for you to provide lift. Come out of your tacks slightly fat to get the speed back up.

As Ken discusses in his post twist in the sails is very important. Its easy to "choke" the sails on this boat because twist is so important. We keep the top tell tail on our main "fluttering" ie; on the verge of stalling. In 15 knots plus you should do very well in PHRF.
